The Management of Health and Safety at Work Regulations and Fire Regulations place a very strict 'duty of care' on the manager of the premises. There are a number of legal requirements that commercial kitchens and food processing businesses have to adhere to. These include:

Where access is limited we are able to install access panels to ensure that thorough ventilation cleaning is completed.


The Guide to Good Practice requires that access panels should be installed at regular intervals in the duct work so that the interior can be cleaned. The access panels comprise a metal panel with rubber gaskets, many older systems do not have access panels.

Kitchen deep cleans are scheduled to meet the customer’s individual needs. The entire kitchen is thoroughly cleaned from “top to bottom”. Where applicable the hot cooking equipment is stripped down and the components, eg burners, cooker tops, oven racking etc. are thoroughly cleaned and where ever possible we aim to return the items to an “as new” condition.


The structure is also given a full clean using a variety of methods dependant on the condition, age and type of surface. This could be via our steam cleaning system or a scrubber/dryer for the floors


All equipment is moved from its position, where it is allowed, to ensure the areas behind and underneath also receive the same treatment as the rest of the kitchen. All other items found in the kitchen i.e. light fittings, pipe work, ceilings, grills etc will receive the same duty of care as the other kitchen equipment.


The main kitchen canopy is cleaned internally, externally and behind the grease filters together with the ductwork and external cowl.

Grease traps are a fundamental part of any commercial kitchen or food processing plant, helping to ensure harmful greases, fats and oils are captured and prevented from entering the drainage system where they could cause potentially damaging blockages.


Grease can build up very quickly inside grease traps making them ineffective.

Waste from grease traps is classified as a controlled waste. The Environmental Health are required to see evidence that regular cleaning of the grease trap has been performed and any waste that has been removed is disposed of by a registered waste carrier.
